I love cooking up quick dinners. I bought cauliflower and a bunch of sweet basil from the farmer's market for $2 and a box of Gluten-free pasta for $3 at Whole-Foods. This meal is so simple yet it's also healthy, delicious, and inexpensive.
Roasted Cauliflower Recipe:

Gluten-Free Pesto Pasta Recipe:
Ingredients
- handful of fresh sweet basil leaves
- 1 clove of garlic
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper, to taste
- Freshly grated Pecorino cheese -optional
Directions
Combine the basil, garlic, olive oil, and salt + pepper in a food processor or in a magic bullet
Pulse until smooth.
Let the pesto sit. I find that refrigerating the pesto over night improves the taste of the pesto.
Cook the Gluten-Free pasta according to directions.
Mix the pasta with the pesto.
Optional: top with pecorino cheese & enjoy













I love it! I usually add almonds or walnuts to my pesto, and recently I experimenting with arugula, in addition to fresh basil. so yummy!
